Mixed berry clafoutis

<p>In case you didn’t know, a clafoutis is a baked French dessert that calls for berries to be arranged in a greased baking dish and covered with a thick batter. And if that description didn’t sell you, take our word for it, this clafoutis is delicious. Enjoy our mixed berry variation – but use your favourite berries.</p> <p><strong><span style="text-decoration: underline;">Ingredients:</span></strong></p> <ul> <li>150g raspberries</li> <li>150g blueberries</li> <li>1 tablespoon brandy</li> <li>1/2 cup caster sugar</li> <li>1/2 cup plain flour</li> <li>½ teaspoon baking powder</li> <li>¼ teaspoon salt</li> <li>3 large free range eggs</li> <li>½ teaspoons vanilla extract</li> <li>250ml pouring cream</li> </ul> <p><strong><span style="text-decoration: underline;">Method:</span></strong></p> <ol> <li>Preheat your oven to 180°C, and lightly grease a baking dish.</li> <li>In a large bowl, mix your berries with the brandy and leave aside.</li> <li>Sift the flour into a large bowl, and stir in the sugar, salt, and baking powder.</li> <li>In a separate bowl, whisk together the eggs, cream, and vanilla extract. Slowly add the cream mixture to the flour mixture and stir until it forms a smooth batter.</li> <li>Arrange the brandied fruit in the baking dish and slowly pour the batter over the top, ensuring the berries are evenly distributed.</li> <li>Bake for 35 minutes until the clafoutis is puffed and lightly golden brown.
