Julie Goodwin shares her top tips for perfect potatoes every time

<p dir="ltr">Who doesn't love a good, hearty, delicious serving of fluffy and decadent potatoes?</p> <p dir="ltr">Original <em>MasterChef Australia</em> champion Julie Goodwin has shared her ultimate hacks for cooking the perfect potatoes every time, whether they’re mashed, roasted or baked.</p> <p dir="ltr">According to Julie, there are three key things every home cook needs to keep in mind the next time potatoes are on the menu. </p> <p dir="ltr"><strong>Make sure you have the right potatoes </strong></p> <p dir="ltr">Depending on whether you want baked, mashed, roasted, or any other way you want to prepare your potatoes, it all starts in the supermarket. </p> <p dir="ltr">"I find that for things like mashed potatoes and gnocchi and rostis you want a floury potato, so the general rule is dirty potatoes for those things," Julie told <em><a href="https://kitchen.nine.com.au/latest/julie-goodwin-top-three-tips-to-cook-potatoes-robertson-potato-festival/4d16ba12-bf14-4af2-990e-dcf0e89c30ee">9Honey</a></em>.</p> <p dir="ltr">"And then for stuff like potato salads, boiled baby potatoes, and potato bake, it's better to have a waxy potato because they hold their substance better. And those are the ones that are sold clean, so things like the Pontiac and Desiree with the pink skin or the washed potatoes with the white skin."</p> <p dir="ltr">"If you want to use them in an Irish stew to break down and thicken the sauce you've got to use a floury potato," she says. "So tend to your dirty ones."</p> <p dir="ltr">She says that if you're buying a clean, waxy potato, you won't have to peel them since the skin is supposed to be edible.</p> <p dir="ltr">However, if you're buying a dirty, floury potato, then you're going to want to peel the dirt off first and then wash off the residue.</p> <p dir="ltr"><strong>Get those crispy edges </strong></p> <p dir="ltr">As every home cook knows, the key to the perfect roasted potato is for the inside to be soft and fluffy while the outside stays crispy. </p> <p dir="ltr">It can be a tricky balance to master, but Goodwin says there's a simple way to get it right every time.</p> <p dir="ltr">"I like to par boil them before I roast them. Just so that they go a bit fluffy around the edges," she explains. "What happens is those bits go really crispy and lovely."</p> <p dir="ltr"><strong>Let the flavour flow </strong></p> <p dir="ltr">When it comes to seasoning your potatoes, it's hard to know what flavours will suit your dish best. </p> <p dir="ltr">According to Goodwin, more is less when you season potatoes, so it's best to close the spice cabinet.</p> <p dir="ltr">"Salt is absolutely the number one, pepper's beautiful [but] it depends on what the meal is," she says. "So if you're doing a bit of a Portuguese or Spanish inspired meal you might put some paprika on there.”</p> <p dir="ltr">"But I really love rosemary and that's beautiful if you pound that up with your salt and put it on the potatoes that makes it really nice."</p> <p dir="ltr"><em>Image credits: Getty Images / Instagram</em></p>

Don’t give mum chocolates for Mother’s Day. Take on more housework, share the mental load and advocate for equality instead

<div class="theconversation-article-body"><em><a href="https://theconversation.com/profiles/leah-ruppanner-106371">Leah Ruppanner</a>, <a href="https://theconversation.com/institutions/the-university-of-melbourne-722">The University of Melbourne</a></em></p> <p>With Mother’s Day right around the corner, many grateful and loving families are thinking about what to give mum to show their appreciation.</p> <p>Should you give her chocolate? Nope. Fancy soaps? Nope. Fuzzy slippers, pyjamas, scented candles? No, no and no.</p> <p>On this Mother’s Day, keep your cash and give your wonderful mother gifts that will actually have a long-term impact on her health and well-being.</p> <h2>1. Do a chore that mum hates and hold onto it … forever</h2> <p>Research <a href="https://www.tandfonline.com/doi/full/10.1080/13545701.2020.1831039">shows</a> men have increased the amount of time spent on housework and childcare and that mothers, over time, are doing less (hooray!).</p> <p>But, women <a href="https://onlinelibrary.wiley.com/doi/abs/10.1111/j.1741-3737.2008.00479.x">still do more housework</a> than men, especially when <a href="https://onlinelibrary.wiley.com/doi/full/10.1111/gwao.12497?fbclid=IwAR2dp04p2sFqbDqdehXmXgDSfTYwX3GRzP7ScMJhSOrMePTGQVErR2TTX88">kids are in the home</a>.</p> <p>Further, <a href="https://journals.sagepub.com/doi/abs/10.1177/0891243205285212">men tend to pick up the more desirable tasks</a>, like <a href="https://www.jstor.org/stable/3598304">cooking and playing with the kids</a>, leaving mothers to do the less pleasurable chores (think cleaning toilets and clearing out fridges).</p> <p>The chore divide in same-sex relationships is generally found to be more equal, but some critique suggests equality may suffer <a href="https://www.nytimes.com/2018/05/16/upshot/same-sex-couples-divide-chores-much-more-evenly-until-they-become-parents.html">once kids are involved</a>.</p> <p>This year give your mum (or mums) the gift of equal housework and childcare sharing – start by taking the most-hated tasks and then hold onto them… forever.</p> <p><a href="https://onlinelibrary.wiley.com/doi/full/10.1111/gwao.12727">Research</a> shows housework inequality is bad for women’s mental health. Undervaluing women’s housework and unequal sharing of the chores deteriorates <a href="https://link.springer.com/article/10.1007/s11199-022-01282-5">relationship quality</a>, and <a href="https://journals.sagepub.com/doi/full/10.1177/0038038516674664">leads to divorce</a>.</p> <p>Housework and childcare take up valuable time to keep the family happy, harmonious and thriving, often at the expense of mum’s health and well-being.</p> <p>So, skip the chocolates and show mum love by doing the worst, most drudgerous and constant household chores (hello, cleaning mouldy showers!) and keep doing these… forever.</p> <h2>2. Initiate a mental unload</h2> <p>The <a href="https://www.abc.net.au/news/health/2017-09-14/the-mental-load-and-what-to-do-about-it/8942032">mental load</a> is all of the planning, organising and management work necessary to keep the family running.</p> <p>The mental load is often perceived as list making or allocating tasks to family members.</p> <p>But, it’s so much more – it is the <a href="https://theconversation.com/planning-stress-and-worry-put-the-mental-load-on-mothers-will-2022-be-the-year-they-share-the-burden-172599">emotional work</a> that goes with this thinking work.</p> <p>The mental load is the worry work that never ends and can be done <a href="https://www.tandfonline.com/doi/abs/10.1080/13668803.2021.2002813">anywhere, anytime and with anyone</a> (in, for example, said mouldy shower).</p> <p>Because the mental load is performed inside our heads, it is invisible. That means we don’t know when we or others are performing this labour unless we really tune in.</p> <p>In fact, it is often when we tune in through quiet time, relaxation or meditation that the mental load rears its ugly head. Suddenly you remind yourself to buy oranges for the weekend soccer game, organise a family movie night and don’t forget to check in on nanna.</p> <p>Women in heterosexual relationships are <a href="https://journals.sagepub.com/doi/abs/10.1177/0003122419859007">shown to do more</a> of the mental load with serious consequences for their mental health. But we don’t have a comprehensive measurement of how much women do it nor how it is allocated in same-sex couples.</p> <p>So, on this mothers’ day spend some time talking about, cataloguing, and equalising the family’s mental load.</p> <p>This isn’t just making a list about what has to be done but also understanding <a href="https://www.abc.net.au/news/health/2017-09-14/the-mental-load-and-what-to-do-about-it/8942032">how the mental load</a> connects to the emotional health of the family, and the person carrying this <a href="https://www.newamerica.org/better-life-lab/blog/making-the-mental-load-visible/">invisible labour, worry and stress</a>.</p> <h2>3. Speak up for your mum and all caregivers</h2> <p>Families alone cannot bear the brunt of the caregiving necessary to keep us thriving.</p> <p>Governments, workplaces and local communities also play a critical role. For this mothers’ day, pick an issue impacting mothers (for example, equal pay, affordable childcare or paid family leave) and do one thing to help move the needle.</p> <p>Write a letter to your boss, your local MP, or donate money to an advocacy organisation advancing gender equality.</p> <p>Or, role model these behaviours yourself – normalise caregiving as a critical piece of being an effective worker, create policies and practices that support junior staff to care for themselves, their families and their communities and use these policies.</p> <p><a href="https://journals.sagepub.com/doi/abs/10.1177/0891243216649946">Research</a> shows men want to be equal carers and sharers but often fear what taking time off for caregiving will signal to their employer despite evidence that fathers who request flexible work are perceived more <a href="https://academic.oup.com/sf/article-abstract/94/4/1567/2461609?login=false">favourably</a>.</p> <p>Appearing to be singularly devoted to work was shown to be impossible during the pandemic with kids, spouses, partners, and pets home all day long.</p> <p>Learning to create more care-inclusive workplaces and communities is critical.</p> <p>Paid parental leave, affordable and accessible high-quality childcare, flexibility in how, when and where we work and greater investments in paid sick leave, long-term disability support and aged care are just a few policies that would strengthen the care safety net.</p> <p>We will all be called upon to care at some point in our lives – let’s create the environments that support caregiving for all, not just mum.<!-- Below is The Conversation's page counter tag. Aussie cruising fanatics share their top cruise tips

<p dir="ltr">An Aussie couple who are dedicated to cruising have shared their top tips to keep in mind before setting sail. </p> <p dir="ltr">Marty and Jessica Ansen are about to set off on their 130th cruise and have made headlines around the world for their devotion to spending most of their lives at sea.</p> <p dir="ltr">Together they have sailed roughly 770,000 nautical miles over more than 2,300 days on board, which equates to more than six years spent at sea.</p> <p dir="ltr">The Brisbane grandparents, both 77, have just headed off on their tenth trip around the globe, which is also their 52nd consecutive cruise adventure. </p> <p dir="ltr">During all their time spent at seas, the Ansens have learned a thing or two about life onboard, and have shared their top ten tips to make time on a cruise ship as smooth sailing as possible.</p> <p dir="ltr">Their number one tip for cruise travellers is to take a backup credit or debit card, as Marty told<em> <a href="https://travel.nine.com.au/cruising/cruise-tips-couple-princess-cruises-marty-and-jessica-ansen-australia/c61281dd-c47a-41bf-b166-608b581eccdf" target="_blank" rel="noopener">9Travel</a></em>, "Replacing a lost or stolen card while overseas is not for the fainthearted."</p> <p dir="ltr">The Ansens recommend making a clear and legible copy of your passport, as consulates find it a lot easier if you can provide a copy ready to go when you disembark.</p> <p dir="ltr">After all their years at sea, Marty and Jessica are pro-packers, and recommend wearing all your heaviest clothing when you check in to better adhere to a strict weight limit. </p> <p dir="ltr">"Jessica and I have one piece of luggage, usually under 20kg," Marty said.</p> <p dir="ltr">"We also each have one bag of hand luggage. Going on board, regardless of weather, I wear my heaviest clothing."</p> <p dir="ltr">When it comes to packing, they also advise leaving your toiletries at home. </p> <p dir="ltr">"Leave consumables like shampoo, conditioner, toothpaste and any creams and potions at home as Princess (cruise line) provides basic toiletries and anything you do need can be bought at the first port," Marty said.</p> <p dir="ltr">Marty and Jessica also recommend packing all your essentials in your hand luggage, as it can often take a while for your checked bags to arrive in your cruise ship cabin. </p> <p dir="ltr">"Place all jewellery, passports, visas, medication money and credit/debit cards in your hand luggage for easy retrieval," Marty said.</p> <p dir="ltr">Marty said one thing every traveller must check before setting sail is what electrical connection is used onboard. </p> <p dir="ltr">"Check what electrical connection is used onboard and have the right adapter ready to charge your devices,' Marty said.</p> <p dir="ltr">Many ships have American and European plug points, while newer ones may have USB connections too.</p> <p dir="ltr">When it comes to bringing medications, the Ansens said you should always bring extras, as well as the required paperwork.</p> <p dir="ltr">"As an extra precaution carry copies of scripts so that if you do run out or lose your medications it will be easier to prove what you need to overseas pharmacies or doctors," Marty said.</p> <p dir="ltr">Lastly, like any overseas adventure, the Ansens said it is important to always have travel insurance, and to make copies of your policy. </p> <p dir="ltr"><em>Image credits: X (Twitter)</em></p>

Kate Middleton shares new birthday photo of Prince Louis

<p>Prince Louis has turned six! </p> <p>Prince William and Princess Kate have released a new photo of the young royal to mark his special day. </p> <p>"Happy 6th Birthday, Prince Louis! Thank you for all the kind wishes today,” the couple wrote on social media. </p> <p>In the picture, taken by the Princess of Wales, the young royal donned a plaid shirt with blue pants and was smiling at the camera. </p> <p>Eagle-eyed royal watchers noticed one sweet detail in the photo: Prince Louis appears to have had a visit from the tooth fairy, as one of his bottom front-teeth was missing. </p> <p>“Thank you so much for sharing this delightful picture. I see the tooth fairy has been visiting - goodness time flies so fast,” one fan wrote on X. </p> <p>"Happy birthday Prince Louis!! Her life was abruptly taken while shopping for a birthday present with her daughter. </p> <p>At a memorial service held in Sydney’s Botanic Gardens, hundreds gathered to pay their respects to Jade. At the request of Jade's heart-broken mother, Elizabeth, mourners adorned themselves in bright colours, a vibrant tribute to a woman described as "dearly loved and irreplaceable".</p> <p>Elizabeth's words cut through the sombre air, pleading for attention not only to her daughter's memory but to the pressing issues that led to her untimely demise.</p> <p>“I would like you to listen, I want Australia to listen,” Elizabeth said. “Jade Young was attacked and killed outright in front of her daughter.”</p> <p>As part of her tribute, Elizabeth then made a poignant call for action. “Never again do I want to read the words tragic or tragedy associated with the perpetrator of the murder of my daughter,” she said. “He came prepared, he had intention. Mother booted off ride share app for her unusual name

<p>A young Sydney mother has been booted off popular ride sharing app Uber, after they deemed her birth name too inappropriate. </p> <p>Swastika Chandra's first name means good luck and prosperity in her native Sanskrit language, and holds a lot of cultural significance and connection to her Hindu heritage. </p> <p>However, to global transport app Uber, her name was deemed too offensive to be let on the platform, as they said her name violates their terms and conditions. </p> <p>The 35-year-old grew up in Fiji, where she says her name was commonly heard in classrooms throughout her childhood.</p> <p>"It is a very common name. I personally know four or five other girls with the same name," she told <a href="https://9now.nine.com.au/a-current-affair/uber-bans-sydney-woman-from-using-service-because-of-her-first-name/2771dd1f-b9fd-4ba6-8045-671145bc0c02" target="_blank" rel="noopener"><em>A Current Affair</em></a>. </p> <p>"In school, we had two or three other girls with the same name. It means good luck. It means good things for me."</p> <p>Chandra didn't run into any issues using her name on her birth certificate, Australian citizenship paperwork, her health care card or her driver's licence. </p> <p>However, last October Uber banned her account, claiming her name was a violation of their terms of use due to its appropriation by Adolf Hitler's Nazi Party and neo-Nazis.</p> <p>Coinciding with the start of the Israel-Hamas war, Uber brought in new guidelines on words that could be offensive - including swastika.</p> <p>Inadvertently caught up in the middle of a policy which had the best of intentions, Chandra was told she would have to change her name to get back on the app.</p> <p>"I was putting in an order for food one afternoon and went to the payment stage and this pop-up came up saying, 'Your first name is in violation and you need to change your name on the app'," she explained.</p> <p>Chandra has a deep understanding of her name's very troubling double meaning, but she says the community needs to know the word's origins.</p> <p>"They don't know that the Hindus used it for thousands of years before Hitler used it in the wrong way," she said.</p> <p>"A bit of education, I think, is needed. I'm very proud of my name. I believe in the good that comes with it and I'm not changing it for anyone."</p> <p>Five months later, Uber has backed down from their decision and allowed her to rejoin the app, although it took intervention from Australia's peak Hindu body, The Hindu Council, support from the Jewish community and the NSW attorney-general to make it happen. </p> <p>The Jewish Board of Deputies also backed Chandra's fight, telling A Current Affair: "There is a difference between Ms Chandra innocently using her name and the deployment of a sinister symbol."</p> <p>The young mum has a message for all the other young girls who might have a different name to others, saying "Don't let the past be a stepping stone for your future."</p> <p>"Be proud of your name. "I miss her hugs": British acting legend shares heartbreaking loss

<p>Actor Warwick Davis has shared the heartbreaking news of his wife's death. </p> <p>The actor, known for his roles in <em>Harry Potter</em> and <em>Star Wars</em>, took to social media to share the news of his wife Samantha's death, who passed away at the age of 53. </p> <p>“Her passing has left a huge hole in our lives as a family. I miss her hugs”, Warwick, 54, said.</p> <p>He added, “She was a unique character, always seeing the sunny side of life she had a wicked sense of humour and always laughed at my bad jokes.</p> <p>“Without Sammy, there would have been no Tenable quiz show, no Willow series. No Idiot Abroad Series 3.”</p> <p>Warwick said Samantha was his “most trusted confidant and an ardent supporter of everything I did in my career”.</p> <p>The couple’s children, Harrison and Annabelle, added, “Mum is our best friend and we’re honoured to have received a love like hers</p> <p>“Her love and happiness carried us through our whole lives”.</p> <p>Warwick and Samantha met on the set of the movie Willow in 1988 and got married three years later. </p> <p>Samantha had achondroplasia, a bone growth disorder that causes disproportionate dwarfism.</p> <p>Warwick has previously opened up about his wife’s health after she was rushed to hospital with sepsis in 2018, and had to undergo several different surgeries to stabilise her condition. </p> <p>Warwick, co-founder of charity Little People UK, has often spoken out about the health battles related to his condition, as well his wife’s.</p> <p>He was born with Spondyloepiphyseal dysplasia congenita (SED), an extremely rare genetic form of dwarfism, which has been inherited by both their daughter Annabelle and son Harrison.</p> <p><em>Image credits: Getty Images </em></p>

"Tears started rolling": First glimpse of Molly the magpie shared by carers

“Let’s share it”: Karl’s wild idea to save the Brisbane Olympics

<p>Karl Stefanovic has become the unlikely face of a good idea, pitching a revolutionary way to save the Brisbane Olympics from disaster. </p> <p>The 2032 games will be the first time Australia has hosted the event since Sydney in 2000, with hundreds of thousands of people expected to make the pilgrimage to the sunshine state to watch their favourite sports. </p> <p>Despite the building excitement for the games, the Queensland government has copped backlash in recent weeks over the preparations for the event, after Premier Steven Miles announced he would bin a $3.4 billion plan to build a new inner-city stadium in Victoria Park in time for the Olympics.</p> <p>Instead, the premier plans to use the exisiting Suncorp Stadium to host the opening and closing ceremonies, while the Queensland Sport and Athletics Centre will host the athletics events.</p> <p><em>Today</em> host and Brisbane native Karl Stefanovic has labelled the plan as a “seismic international embarrassment” and in a strange turn of events, even offered up a good suggestion for how to fix it.</p> <p>“So how about we share the Olympics across the country, opening ceremonies in all the major already existing stadiums, events split among world-class facilities and the rest of the events showcasing this great country to the world,” he said.</p> <p>“We’ll have the triathlon on the Gold Coast, the cycling in Far North Queensland, the surfing at Bells Beach, the marathon past Uluru, the shooting in Longreach, it could be a magnificent two-week tourism ad for this country, leaving a legacy that’s cheaper."</p> <p>“Our athletes deserve the very best, so if Queensland can’t do it, let’s share it. ”</p> <p>It seems Karl isn't the only one up in arms over the decision to not build a new stadium, as a group of high-profile Aussie Olympians penned an open letter to the premier, imploring him to "revisit the decision". </p> <p>The letter states, "We all remember the magnificent event that Sydney put on in 2000. Queensland deserves something equally spectacular, without a centrepiece that would reek of compromise." </p> <p>The letter was signed by 14 current and former Australian Olympians including Grant Hackett, Sally Pearson, Leisel Jones and more. </p> <p><em>Image credits: Today </em></p>

Queen Camilla shares update on Kate Middleton

<p>Queen Camilla has shared an update on Kate Middleton's wellbeing while chatting to the public during a royal engagement. </p> <p>While attending the Farmers’ Market in Shrewsbury on Wednesday, hundreds of royal fans gathered to catch a glimpse of Camilla, and to pass on their well wishes for the Princess of Wales in the wake of her cancer diagnosis. </p> <p>Two young girls greeted Queen Camilla with handmade posters that read "Send our love to Kate".</p> <p>Camilla promised she would pass the message on before telling the crowd, “I know that Catherine is thrilled by all the kind wishes and support.”</p> <p>The update comes in the days after Kate's shocking announcement that cancer had been detected during a planned surgery in January. </p> <p>In an emotional video message to royal fans, the Princess of Wales shared that she is undergoing preventative chemotherapy and thanked members of the public who had been concerned about her health. </p> <p>In the moving clip, the 42-year-old royal she said her diagnosis was a “huge shock” but vowed she was “going to be OK”.</p> <p>Camilla was said to be a pillar of support and in regular contact with Kate following her diagnosis.</p> <p>The 76-year-old has also been Charles’ “rock” following his own cancer shock and wants to be as supportive for Kate.</p> <p>The Queen has continued to carry out all of her royal duties and attended many events by herself after urging Charles to slow down.</p> <p><em>Image credits: Getty Images</em></p>

"Exciting news": MKR couple Carly and Tresne share heartwarming update
