5-minute mixed berry mousse

Ready in just five minutes, this dessert will satisfy when you crave something sweet.

Serves: 4

Ingredients:

Method:

  1. Place the berries into your food processor and blend to a chunky puree.
  2. Add the honey and blend again until combined.
  3. Pour in the egg white and blend for around three minutes until the mousse is smooth and fluffy. It should lighten in colour and double in volume.   
  4. Spoon the mixture into glasses or bowls and serve immediately.

Note: As this mousse is low in sugar, it doesn’t keep for more than an hour in the fridge before losing its volume, so it’s best consumed right away.
