Rocket, feta and pomegranate salad

A fresh, bright and crisp salad that is sure to impress at any table, you will love the combination of rocket, feta and pomegranate.

Serves: 4

Ingredients:

• 200g feta
• ½ lemon, zested and juiced
• 120g rocket
• 3 tablespoon extra-virgin olive oil
• 2 tablespoon red wine vinegar
• 1 teaspoon Dijon mustard
• 1 red onion, sliced
• 2 pomegranate, seeds only
• Salt and pepper, to season

Method:

1. Whisk together lemon juice, lemon zest, mustard, vinegar and olive oil together in a bowl. Season with salt and pepper.
2. In a separate large bowl, combine rocket, pomegranate seed, red onion and feta cheese. Pour dressing over salad and toss to coat. Serve immediately.
