Roasted apricots with runny custard

This simple recipe for roasted apricots with runny custard from the Maggie Beer Foundation is simply delicious and perfect for a winter dessert.

Serves: 6-8

Ingredients:

Method:

  1. Preheat a fan forced oven to 220°C.
  2. Cut apricots in half and remove the stone.
  3. Place the apricots cut side facing up on a lined baking tray.
  4. Sprinkle the brown sugar over the apricots, then place them into the preheated oven and bake for 15 mins, or until slightly golden brown and soften.
  5. Serve with runny custard.
