Reader recipe: Lemon tart
Rena Adams, an Over60 community member, shares her scrumptious lemon tart.
Rena says, “Here is an easy lemon tart to make for a quick dessert.”
Serves: Six
Preparation time: 20 minutes
Cooking time: 40 minutes
Ingredients:
- 1 sheet shortcrust pastry
- 1/2 cup of castor sugar
- 1/2 cup of lemon juice
- 1/2 cup of cream
- 4 eggs
- Lemon rind finely grated
- Icing sugar for dusting
- Thick cream to serve
Method:
- Preheat oven to 180C or 160C for a fan oven.
- Grease a 22cm pie dish.
- Line prepared dish with pastry. Trim edges. Chill for 15mins.
- Line pastry dish with baking paper fill with rice and bake for 15mins. Remove rice and bake further 5mins.
- Mix together eggs, sugar, juice, rind and cream. Pour into prepared tart shell.
- Bake 30 to 35mins until set. Cool in pan.
- Dust tart with icing sugar. Serve in wedges topped with thick cream.
