Pommes Anna

This classic French dish of sliced and layered potatoes is crispy on the outside, tender on the inside, and delicious all the way through. It’s so simple to make, too, which is always a nice bonus when you’re after a new side dish.

Method:

  1. Peel your potatoes and then slice them very thinly (a mandolin comes in handy for this step).
  2. Preheat your oven to 200°C, then rinse your potato slices in a colander to get rid of any starch. Pat dry on a clean cloth.
  3. Generously grease the base and sides of a baking dish or ovenproof fry pan with melted butter and arrange the potato slices in overlapping circles. Brush each layer with butter and season with salt and pepper as you go.
  4. Cover with a lid or foil and bake for between 45 minutes and an hour. Test the potatoes with a skewer to see if they’re tender.
  5. Remove from the oven, invert onto a serving dish and serve in wedges (like a cake).
