Chocolate Chunk Cookies

When you want gooey indulgent cookies in a hurry, these are your new go-to! Throw it all in a bowl, bake and you’re done!

Ingredients

1½ cups self raising flour

¼ cup plain flour

¼ cup cocoa

1 cup caster sugar

½ cup brown sugar

180g block dark chocolate, coarsely chopped

180g block white chocolate, coarsely chopped

150g butter, melted

1 egg

1 egg yolk

1 tsp vanilla extract

Method

  1. Preheat oven to 160C fan-forced (180C conventional). Lightly grease and line 3 oven trays with baking paper.

  2. In a large bowl, sift combined flours and cocoa. Stir in sugars. Add butter, egg, extra yolk, and vanilla. Stir to combine (you may need to use your hands at the end to combine).

  3. Combine dark and white chocolate in a bowl and stir in two-thirds of the chopped chocolate to the dough.

  4. Roll heaped tbsps of mixture into balls. Arrange on trays, 4cm apart. Flatten slightly. Press a little extra chocolate onto tops. Bake 10-12 mins until just set.

  5. When cookies are straight out of the oven, press extra reserved chocolate onto tops of cookies while still warm. Allow to cool slightly, then serve.
